Honey Baked Australian Barramundi

Ingredients

Glaze:

  • 150g butter
  • ½ cup honey
  • 3 garlic cloves, minced

Sauce:

  • 1½ cups sour cream
  • ½ cup dill
  • 1½ tbsp lemon zest

Finish:

  • Cranberries
  • Almonds, chopped
  • Parsley, roughly chopped 
  • Pomegranate
  • Lemon juice

Method

  1. Top with cranberries, almonds, parsley, pomegranate and lemon juice
  2. Mix together the butter, honey and garlic, pour over barramundi fillets
  3. Mix together sour cream, dill and lemon zest, spread over the barramundi fillets
  4. Cook in the oven for 30 minutes or until cooked through
