Barramundi is rapidly becoming one of the world’s most sought after fish for its versatility in cooking methods, but also due to it’s outstanding flavour profile that keeps people coming back for more.
Barramundi has a firm, white, succulent flesh with a mild flavour. Both fillets and whole fish can be cooked with the skin on, and due to the high oil content of Infinity Blue fish, Barramundi crackling can be created by searing the skin with a little salt. This combination of a crunchy, salty crackling, and succulent flesh is a flavour & texture experience not to miss! For smoked barramundi recipe’s, click here!
